After a week of hazy, finally can get some good weather. Last Saturday afternoon, bake some blueberry muffins for my girls tea break. Love this recipe, so easy and taste great! Even a baking dummy like ME can do it! Lol! Thanks to my bento friend Mom's In Love Bento recommended this recipe to me. The recipe comes from another blogger Mitong which I love her recipes very much!
And here is the recipe:-
Ingredients: (6 muffins)
Cake flour / low protein flour 110g
Unsalted butter 110g
Sugar 65g
Baking powder 1 1/2 tbsp
Eggs 2 pcs
Blueberry - 125g (but i add more than that :P)
Preparation:
1) Remove the unsalted butter from fridge and keep it in room temperature so that it will turn soft.
2) Eggs in room temperature too.
3) Mix the cake flour with baking powder, sift twice.
4) Wash blueberry and dried well.
5) Preheat the oven at 200deg.C (but due to my oven a bit beyond control :P so i set at 160deg.C)
Method:
1) Mix the unsalted butter with sugar till it turns a bit white, next pour in the eggs. Pour in the eggs slowly, divide it about 3-4 times, mix well each time before continue pouring the eggs.
2) Add sifted flour (preparation 3), mix well using spatula.
3) Add in 2/3 of the blueberries in the batter.
4) Fill in the muffin mould and add the balance blueberries on top.
5) Put it in the oven and bake for 20 minutes.
That's it! And here is my blueberry muffins! ^_^
